🍪 Oven-Baked Ragi Cookies (Eggless)Ingredients (makes ~12 cookies)

  • 1 cup ragi flour

  • 1 cup whole wheat flour (or all-purpose flour)

  • 1 cup powdered jaggery (or brown sugar)

  • ¼ cup softened butter (or ghee )

  • ¼ cup milk (adjust as needed)

  • ½ tsp baking powder

  • ¼ tsp cardamom powder (optional but great for flavor)

  • 2–3 tbsp chopped nuts (almonds/cashews) – optional


    Instructions

    1. Preheat oven to 170°C (340°F). Line a baking tray with parchment paper.

    2. Mix dry ingredients:
      In a bowl, combine ragi flour, whole wheat flour, baking powder, salt, and cardamom.

    3. Cream butter & jaggery:
      In another bowl, beat softened butter (or ghee/coconut oil) with powdered jaggery until creamy.

    4. Combine:
      Add the dry mixture to the butter–jaggery mix. Add milk little by little and bring it together into a soft dough (not too sticky).

    5. Shape:
      Roll small balls, flatten slightly, and place on the lined baking tray.

    6. Bake 12–15 minutes at 170°C.
      Cookies should look slightly firm at the edges but soft in the center.

    7. Cool:
      Let them rest on the tray for 10 minutes—they firm up as they cool.
